Ryan is a Canadian-born chef and hospitality creative who has spent the last decade making an indelible mark on the London, UK dining scene. Specialising in volume operations, Ryan has worked with London's best operators (Joel Robuchon, Caprice Holdings, JKS Restaurants, Azumi) to deliver menus and award-winning concepts in landmark locations (The Shard, Battersea Power Station, Annabel’s, Centrepoint).

Ryan’s experience ranges from Michelin ** restaurants to food halls, luxury estates and production kitchens (projects here), including recent focus in designing venues and building brands, Ryan is also experienced in tech, commercial partnerships, marketing, finance, HR, site ops and overall creative direction. The skills and network he has acquired make Union 38 a “one-stop shop” for  solutions
